In 1996 I had the opportunity to visit the Culinary Institute of America in Hyde Park, New York for their 50th anniversary. It is the oldest culinary school in the United States. Founded in 1946 in New Haven, Conn. They have 4 restaurants staffed by the culinary students. Italian style, American, French and Continental. We ate at the American Cafe restaurant. The reservations are hard to come by. We waited 3 months for these. All the food here is prepared and served by the students. The service is impeccable and they couldnt be more attentive and accommodating. The students live here at the Hyde Park facility for 18 months on sprawling grounds. The buildings are also very expansive and interesting. Anyone attending the CIA is sure to earn high marks when looking for restaurant employment. Many chefs of five star restaurants have graduated from the Culinary Institute of America. Visiting here was certainly a wonderful experience. The food was excellent and the we all had a great time.
