I know you will have a wonderful trip to Australia. We found the cuisine to be innovative and fun. There are heaps of wonderful cooking experiences for you to learn culinary skills and enjoy the fresh produce, and seafoods that are abundant in Australia.
The cooking schools around Sydney and Melbourne are great, however I think that Perth based cooking schools will be more convenient. Here are several to consider:

Just to let you know that Northam is about 2 hours drive on mostly straight roads from Perth. It is a small country town of about 10,000 people. There are a couple of places to eat in the town such as the pub, and the Chinese. It is a nice little town that I have visited a few times. I have lived in WA for over 30 years since my parents emigrated when i was a child.
All the courses listed that aren’t in WA will take you a day to travel to by plane - after the two hour drive from Northam to the airport of course! Am not trying to be smart, I know it’s hard to imagine the distances when you aren’t here!
The Perth courses are the way to go! If you are thinking you could establish a cooking school in Northam, then you may need to wait until you are there!
